I have so many berries on my bush the branches are at breaking point !! I was going to make a wine but all I read on hear is that it will be very acid ? Did I once see on TV that they made a champagne at River Cottage. Can someone enlighten me on the method please.

I can.... If I remember correctly....
3.5lb of goosies mashed
cup of strong black tea
1lb of mashed sultanas
sugar to bring the mixture up to around 1.080/1.090
level teaspoon of marmite or yeast nutrient to manufacturers instructions
water to 5l
mix, boil (debatable) then cool, ferment with white wine/champagne yeast in loosely covered container stir twice daily, strain at 8 days in to a gallon demijohn.
Condition for a year, racking off any lees when they drop.
Reseed with a good hard setting yeast if you can get one(debatable) and prime on the lower side.
I'll check my notes when I find them to confirm the recipe.

Cheers for that. I have found a few notes on Gooseberry wine and notice a lot of them use added grape juice or sultana's. One reccomended Welch's grape juice.I have plenty of berries so might experiment ?
