Wheat beer and finings

Post by Fallen » Tue Jul 06, 2010 8:59 am

I'm about to do my first AG wheat beer.

Do I need to add copper finings (my preferred stuff is protafloc)?

Cheers

You can use it, some say it is a waste of time with a hazy beer.

I have used it and some times I dont,it really does not seem to make much difference.
Fermenter(s): Lambic, Wheat beer, Amrillo/Cascade Beer
Cornys: Hobgoblin clone, Four Shades Stout, Wheat Beer, Amarillo/Cascade Ale, Apple Wine, Cider, Damson Wine, Ginger Beer

If you want a cloudy wheat beer, don't use 'em.
If you want a clear wheat beer, use 'em!

I didn't use finnings in my wheat beer yet they still clear.Cloudiness is caused by the type of yeast.Some people put flour into the boil to create some haziness but wheat beer will always clear given time unless you use the right yeast.

Even with proper yeasts they clear. I worked as a barman and waiter for years in Germany and with older hefe weizen stock you just rouse the yeast once you've poured the beer and pour the last lot out and that clouds the beer up.
I'd still be inclined to use copper finings on a hefe weizen, don't want that crappy break material in the beer if it can be avoided.

Hefe = Yeast
There are also Krystall weizens which are clear and don't use the typical cloudy yeasts.

I believe that Kristal weizens have been filtered

That is more than possible, I wasn't in to brewing back then and Krystall never appealed to me flavour wise, a weizen was a once in a while summer drink with a bit of banana pulp added.
