Anyone who has followed my "Truckers Delight" brew viewtopic.php?f=24&t=33931 will be familiar with the method. In addition to the main brew in bottles and barrel without priming, I did two other bottles. Each was primed with half the usual amount of sugar but one had an extra addition. Ginger wine!
The idea was to compare the carbonation level in the primed bottle to the unprimed bottles. The ginger wine was just to add the "ginger beer taste" for the missus. I added a splash as you would add cordial to water or lime to lager. The ginger wine was made by a friend and was 14% ABV It tasted VERY strongly of ginger and was very dry.
Anyway...........the point being.......the bottle with the ginger addition produced the head I have always lacked from a bottled beer. It was poured gently and still had a head like a pub pint which was tight and creamy and lasted to the end of the glass. It didn't seem any more carbonated than the other bottle with sugar and gave no more hiss when opened................WHAT HAS PRODUCED THIS FANTASTIC RESULT?

We use PGA powder, propylene glycol alginate, to make our 2% solution, very popular in Europe
