hi, when i first started brewing i would brew in one bucket then after gravity had dropped would either go straight to bottle or to second bucket to add priming then straight to bottle.
Now i, ferment in bucket one for normally 10 days, when gravity is stable rack to second bucket and leave for two to three weeks then bottle, and i have to say this has been the single biggest thing that has improved my brews, i know it takes time and is abit of a pain. but time really is the best thing to improve beer same with conditioning if ya can leave for a good few month the rewards are deffinatly worth it.

I'd consider the extra step and extra risk, I've so far never had an infection so I must be doing something right! *fingers crossed*

Hey JJJ do you have any bother with carbonation after a month or more in the FV's?

In general - for standard quick and easy ales - I do not use a secondary.
However, I chose the "Yes, only for additions of hops, fining etc" option because I do use a secondary for lagers and similar extended conditioning (Kölsch, Altbeir etc), if I'm using a non-flocculant yeast that needs time/help to settle, or for beer that has fruit, spices or other specialty ingredients that are best added after the yeast has done most of its work.

no problems at all, usually begin drinking after about two week in the bottle and to be honest sometimes they have been to livley but given a bit more time, i find i get a nice small bubble.
