TBH I cant justify the expense of kit, the cost per pint and the time of extracting and modifying the starches of AG, but its a purist thing that I will undoubtedly get into in a big way in the near future.
My first 2gal AG was boiled up in a pot on the cooker with free grain and hops, and a wickedly messy experience.
I'm still to sample the outcome... i'm guessing its going to be a rather nice 'Grolsch' style of lager, and as there are only 17 bottles of it conditioning i'm doing really well to resist opening 1. I promised myself it as an xmas prezzy.

But for kit adulteration and extract brewing, you can really make some nice changes that you appreciate once you have brewed a kit a few times and get a feel for what flavours you want to achieve.

as for the youtube vid, I'd be tempted to use plastic wine stoppers cause they are deep n hollow to catch the sediment, but have then caged so they dont blow during secondary, and freeze the necks as you would with a sparkling wine.
If they was cheaper, or you could get a 1 off sample to see if it was worth the cost I would consider them.

It looks to me as though the screw thread is in the device and it takes standard cap bottles

Yea I knw where ya comin from an I more than likely will get into it myself when i'm a bit more experienced lol. . .but i'm very happy with wat I got atm lol. . . I wanna do a cider aswell but would neva even consider doin it from a kit as were talkin bout fruits not grains. . How bout just mashin a sh1t load of apples into a pulp and leaving it to ferment? Or would I have to add a yeast? Or would the natural yeast on the apple skin be enough?

Never fermented off just apples myself, only ever done turbo ciders from cartons of apple juice, but I wouldnt really chance using the natural yeasts as it only takes a wrongun to get a grip and you'll end up with vinegar.
For the cost of a spoonfull of yeast, I'd use it.

Get a 1 gallon demijohn (92p 5l bottle of water from morrisons) and try a TC first.

How does that work from cartons of apple juice then? I woulda thought the preservatives would kill off all the yeast?

You use Apple juice from Concentrate.
Dont use 'apple drink' or anything that contains 'sulphites'
I use Lidl's Vitafit AJ, but you can use any

Throw 3.5 l in a dj, add yeast and wait 36 hrs.
After 36hrs the ferocious ferment should have subsided, top up with another 1l of aj and wait 5 days.
siphon off in to another dj and allow 2-3 days to clear then bottle it up with 1 tsp of sugar per bottle
keep it warm for a week, then chill and drink.

If things go well, you can be drinking it within 12 days.

It usually turns out very dry..............there are plenty of threads on sweetening. As for strength 4% to 11% !! Make it what you want.

Second attempt was a lot better and reli got my enthusiasm up an I was thinkin of gettin into the allgrain brewin to reli get into it an master a beer tailored to my own taste. . My 3rd lot. . Is just f***! . I wouldn't change a thing bout it. . I've drank pretty much every ale out there and I genuinely would put this up there with the best i've had, if not the best, so wats the point in goin thru all the hassle with the all grain wen you can get awesome results just using a kit and messing about with it a lil?. . I neva thought in my wildest dreams i'd get an ale of this quality that costs me 35p a bottle instead of anythin up to £2.50 lol. . . Every1 on this site is onto a winner cos its rewardin, cheap, and gives you copious amounts of alcohol to indulge in lol. . . Fantastic! Lol
Can you post up your recipe & process please.

I'm very new to this too & have only done 1 kit.

Your selling this ale really well, so c'mon - share the taste!!

"Those little sediment devices on you tube..................do you need a screw top bottle? It made it sound that way but I guess they somehow screw onto the lip for the crown cap?"

I've just emailed the company to find out.

Can you get them in the UK anywhere?

I had a reply about the Brodie sediment catchers from Sedex...

The sediment catchers will only fit glass screw top stubbies /bottles. The will NOT fit the plastic PET bottles - totally different thread. It must be a screw top glass bottle.
