I believe if kept in the fridge a couple of years from manufacture is one rule of thumb for dried yeast; and longer if in the freezer - though there's no definitive answer as it comes down to individual cases. I understand that a lot depends on its age and how its been kept before you get it, and of course how soon you intend to use it.
I've had some fairly old stuff from warm home brew shops before, I wouldn't want to try keeping that over much, but normally I buy in bulk from places with a high turnover and happily keep it for many months in the fridge.

Stunning!
I'd imagine that if you have the equipment and know-how you could isolate and grow viable yeast from really ancient packets. If there were a need to, anyway.

Hi Dribble,
you should enjoy your APA, i'm just drinking my Coopers APA which has been bottled 3 weeks and it is delicious. I used 1kg light DME and Coopers Brew enhancer 2, it produces quite a strong beer that has a lovely malty taste. Looking at what you've made yours with it should be similar to mine, maybe not so high in alcohol, which might not be a bad thing, I daren't drink much at a time!

Thanks Wilf, really looking forward to mine...drunk the real thing when I was travelling in Oz and decided to use this as my 2nd brew on SWMBO's orders!

I've got an APA ready to be put on with the BE2.I've done a couple of kits with enhancers but fancy going a step further by using additional hops and perhaps even some grain.Any suggestions or recipes you could recommend?

I just done my second APA
1st was as per Coopers instructions with BKE- was nice, lacked a little bitterness imo
2nd was made up with 1 tin of LME and 500g of BKE and a late hop tea (40g of fuggles steeped for 20 mins and added on day 4 of fermention)
Its come out a little darker than expected (but the LME was 'after its sell by date) and when bottling it tasted very hoppy..... 2 weeks on and its starting to take shape nicely
A nice malty flavour with a mild/medium bittering.
