Do ye thrash plenty of air into it and then keep the temperature up? That seems to be the two main things their yeast is born to enjoy.

I thrash no more nor less than I do with my other brews, which have always turned out spot on.
I give it a normal thrashing! It hits the lid alright but never goes any further.
I have a Stout waiting to go, I'll thrash the daylights out of that. Thing is though, I always get a big foamy head before I pitch, and I haven't enough room to add the last few litres of water. The stuff is like marshmallow.
As for the temperature, it'd be in a bain marie at 21 c.

Curioser and curioser! With a good, Public School, thrashing to it, ye'll be doing just about everything I do. Therefore, there's really be no reason for yours not to do as mine do. And mine spew as a matter or course.

Jarv; It makes sense to keep the lid on, if only to save ye dropping ye keys in there, or something. But, air tight, hermetic seals? Not at all, mate. Remember; We used to just sling a damp towel over our open buckets. Nothing went wrong.
Air Locks? Up to you entirely. Some people find it entertaining to see them blip and bubble. Other than that though, they serve absolutely no practical purpose that I'm aware of. Beer inside can still be effectively fermenting long after the bubbles stop.

30 days in a fermenter is no issue at all. Infections do not happen with time, they just get worse with time, infections happen because of bad sanitation or contamination.
Look to your cleaning and sterlising routine for the problem, time was not the issue here.
There have been a lot of fruit flies about this summer over here, they're a bugger for infecting beers and wines too, vinegar flies as they are also known.
I often left my beers 5-6 weeks in the fermenter, although it is at the outer limit of what you should do.
The other thing is that if you did it with a kilo of kitchen sugar, then there's a good possibility that caused the sourness. What did you ferment the kit with?

I used Muntons enhancer!
when I put it in it formed big clumps that didn't dissolve properly followed by 37 pints of cold water and then yeast - lid is on firmly with small clear plastic thing in lid!
I have just set up a new batch, will bottle up after about 8 days!
but taste it first lol

I was just about to start a new thread but after reading this don't think I have to
Similar story, left a bit long in the fv and had started clearing so before bottling gave it a bit of a stir to get the yeast amongst it.
For the record it's a coopers pilsener with enhancer 2, the bottles (pet) firmed up nicely and smartarse, (me) marvels at how clever he is.
In the bottle for 4 weeks, (another record) and last night after a couple of pints of my usual coopers lager I announce to my dad that I'm gonna "treat" him to something a bit fancier. Poured 2 out, looking good, nice head but as pint approaches lips a strange smell is encountered swiftly followed by a similar taste at the time I didn't think, "vinegar" more lemony acidic either way we exchanged looks and came to the conclusion maybe it was meant to taste like that
Pints were finished and we returned to the original brew slightly forlorn, looking back, at the time of fermenting I was making some damson wine for the oh and the kitchen was infiltrated with those bloody little flies and I remember fishing more than one out of the brew.
So as is so often the case, the women have managed to bugger up my drinking
and although I was in denial and was determined to drink it I think it's destined for the sink
