Malibu Kit

Post by Hoppkins » Wed Feb 21, 2007 9:46 am

After 16 days fermenting my malibu is almost ready (This is a condessa kit by the way)

I had to add a few more sachets. One of which is called RE-FINE. Which im guessing is finings.

Check the colour it turned themalibu. About crapped myself.

Was this colour this morning.

How rare.

Is it supposed to do that?

From the look of things what you added there was mainly charcoal to remove any flavour from the fermentation
I guess that your next step is to rack it after it has completely cleared and add the flavorings ?

Thats just it. I dont recall seeing any flavour sachet or anything in the instructions reffering to flavouring..

Maybe the flavour was part of an earlier sachet? :O

If it was charcoal that you added as refine it will pull out all colour and flavour :?

Meh if they forgot to put a flavour sachet in ill just go get a phial of the coconut flavour -_-

Next sachet to go in is "Sodium Metabisulphate" to stop the process im guessing.

I'm only brewing this for diplomacy reasons ;) E.g. the missus wanted it and i wanted to show my habit has a use :D

Malibu is only meant to be 21% so i figured this would be more feasable than brewing a spirit. I would even bother with Whisky.

Can't beat those Islay and Speyside malts ;) Why bother trying to make decent whisky when those exist :O

Almost cleared now. I found the coconut flavour, right at the bottom. Duh!

Daab, I think we talked about this when you came into the shop recently. To get a better flavour "base spirit" rather than use Condessa (which are increasingly hard to get hold of these days) use Alcotec yeast. Using the Alcotec yeast and 8kg brewing sugar means that you get 23 litres of 23% alcohol for well under £30 0 that's less than £1 per 75ml bottle The samples we have in the shop are made from the Alcotec 23% yeast, which ferments to 23% in about 7-10 days and is also much better when using brewing sugar. This makes 5 gallons. If you only want to make 1 gallon then there is a kit available but it only goes to 20%. As for flavourings we now only stock the Prestige essences, which come from Sweden, and are much more like the "real thing". The essences cost £1.50 each and each bottle is sufficient to flavour 1 x 75ml bottle of spirit. If you're in the Ringwood area, pop in and try some.

When I make this I always filter it, as it never seems to clear to a shine. Filtering is not mentioned in the instructions, but if you are a perfectionist then filtering is a good idea as it gives a polish and shine to your spirits.

Well this turned out fantastic. I got roughly 4 liters of this. I had to leave some in the bottle of the demijohn as the combined sediments were starting to get sucked up the siphon.

Rather have less than have more with charcoal in.

Added the flavouring and the sugar.

3 people tasted it who love malibu. The concensus was, better than malibu itself.

So for 12 quid i got 50 quids worth of malibu.

Winner!

I was watching a program ages ago where they had a bloke taste testing 10 different vodkas from the cheapest stuff to the best stuff.

First time around he was bang on with the cheapest and the best.

Second time around they put the nasty stuff through a water filter. I think this was done 10-15 times.

Next time the guy did the taste test the worst moved up in rank to about 4th or 5th.

Would probably be worth filtering the vodka kit to make it taste better :)

I read about that too. Some students asked a professor if this sounded valid, he said sure. The filter will take out the yucky impurities.

Still need to try it. Got a bottle of vod at home ;)
