Chocolate Wine?

GF tried this last Saturday and really liked it. I must confess I'm intrigued. What do you guys think is the best way to go about it? Essense from the baking section at the supermarket? The syrups coffee shops use? Something else? Also, how to fortify? I guess with brandy as it's wine. Does anyone have a method and quantity?

I just read someones post about turkish delight wine and someone said they sould put some chocolate essence in,
which I thought was a great idea (thou ive never seen chocolate essence in the shops) I put Rum essence into one
of my brews and it all seemed to fall to the bottom of the bottle after fermention, it tasted good with a stir, but
was a bit of a let down because it just looked .. wrong and didnty taste like rum... just gave it an ultra sweet kick!
