I am close to reordering grain so decided to see how well the hop stashes were fairing. Still got kilos and kilos BUT i did find a few devac'd packets. Mattypower very kindly sent me a sample of Pacific gem a couple of months back so without further ado i commenced to use the devacced hops and a sampling of Matty's PG in the following recipe. Its a 15 gallon batch so i hope its good as i'll be on it for a while! I was genuinely salivating while inputing the recipe. This is probably more to do with mental problems of my own and not a precursor to the outstanding pint that this will be!
I am holding my hand back a bit on the grain as i want to be able to drink a few of these and still function. IBU's at a 'normal' level to allow access to the beer in a couple of months.

That looks like a well nice brew, simple malt bill that lets them lovely hops sing! The Pacific were an organic batch and actually came out and 17.9% Joe so its all good!

7th gen US-05 .. how are you finding it changes through the generations if at all?

It remains clean tasting and takes off like a rocket when it gets into the wort compared to first few times. I do see your point about it becoming cleaner after its first use or 2. I certainly have no complaints! I almost bought some liquid yeast for this batch then realised that was because i could and not that i needed to. So i'll keep this culture going for a few brews yet. I still have the 5th gen as back up and liven it up every few months. And i keep 2 copies of the latest generation for splitting and back up.

Got this brew on yesterday and finishing today. 15+ gallon.The Pacific gem and Columbus hops have totally stolen the show. Absolutely amazing. I have dropped the abv a little and am upping the steep and dry hopping. Best way to spend a birthday this!

Beer bottled today and amazing tropical fruit aromas with spicy limes coming through in the taste. Can't wait for this bad boy to condition!

I think this one will be a winner! I'm brewing a sub 4% pale special at work on tues using pacific gem bittering and pacifica late then both at flame out! let us know how it tastes joe

Tried 1st bottle two nights ago. Its still very fresh but so far i am getting boiled sweets(esters) off of the Columbus and massively stonking amounts of tropical fruit on the nose. There is also a spicy citrus Lime coming through which is directly from the Pacific Gem. Its a tremendous beer(no point kidding on) and will only improve with time. Glad i made 15 gallon as its going to be popular! We'll see how it goes but next time i might up the Simcoe to get a cats piss/tropical balance going. I'm off to Saudi for a month tomorrow and then Turkey so won't be back here till mid April. By that time the beer will be just hitting its stride. i'll get a couple in the post to you then. If you are selling any of the Pacific Gem i'll buy a Kilo, no worries. Primed it with honey and as its so fresh there was a honey layer going on as well. Good luck with your brew, look fwd to hearing how it goes. The Kingsland Dark is coming together nicely, still weird to be drinking dark and getting hops and sweetness!

Drank it, liked it but it makes me behave strangely so i generally stick to the standard Efes!
