Stout recipe help please

Post by KERNELM » Mon Apr 18, 2011 6:54 pm

Hi all,

I have some malt and hops i want using up for a 38L ( double corny brew )

I have the ingredients ive used in the recipe below. Id like some thing fairly strong but would also like it to condition in a reasonable time. What do you think, does it make sense as a recipe? Any changes you would recommend? Cheers

Hi KERNELM

It looks like a lot of Chocolate to me. I find with that much it takes a while to mellow and condition.
And that’s a hell of a lot of black too. 245 ebc is proper black.
You may like it like that, and that’s fine. But to me I'd halve the choc and black.

Thanks Normski,

I think Ill take down the darker malts then. I assume i will not need to replace the 400 odd grams I will lose with pale malt right?

I think the dark malt percentage is still acceptable for a stout that's going a little more extreme. Black malt has a more subtle taste than we expect. Below 8-10% in total is ok in my books
