Raspberries

Post by Lugsy » Wed Jun 22, 2011 8:13 pm

Hi all

I picked up some cheap raspberries today, £1.50 for two pounds. I was wondering if it would be worth putting them in a demijohn and topping up with some beer, what do you think? I've got a landlord clone conditioning and a nelson sauvin single hop pale fermenting at the moment so I could use either of those.

Next question is what do I need to do to them before adding beer? Do I need to boil them to kill off anything or should I just leave them to do whatever they do? I don't mind risking a few pints of beer either way on the off-chance of making something interesting and drinkable :)

Cheers,

L

You can freeze or boil or pasteurize them if you think they might introduce an infection to your beer.
Or you could simply rack a beer onto them in a secondary fermentor, which is what I'd likely do.
A simple light coloured ale with a single (low) bitterng hop addition works well.

Cheers for the advice Wolfy

I don't have room in the freezer (lots of hops and SWMBO insists on keeping food in it  ) so I had to do something with them today. I put them all (untreated) in a sanitised demijohn and topped it up with the Nelson Sauvin pale I started on Sunday - not ideal and I'm not at all sure about whatever might be living on them already but the alcohol content of the beer is already approaching 5% so that could help.

It should at least be interesting if it works :)

Yes, I think I can see why. It's a bit tart

Me and SWMBO are trying a glass each, it's not too bad with a load of ice and a teaspoon of sugar in a half pint drunk in the sun but it's nothing like Framboise. I think next time I do a fruit beer for her I'll stick to some proper beer and a fruit syrup added at the drinking stage.

All in the name of science though, eh?

Well done for having a go. I would love to know how the real thing is done.
