Passion fruit cider

Post by Bigveees » Sun Aug 21, 2011 9:31 am

I'm currently working on this project and have just started a batch in the dj, I've gone for the following:

2.25L Apple juice
1L pineapple and passionfruit
350mls of Passion fruit syrup
850mls of water
250grams sugar
3 Passion fruits
3 grams of yeast

All that's in the dj at room temperature. So I'm expecting 5 days to ferment and 3 days to settle down. Should bottle after that and two weeks to condition.

Any thoughts?

It's fingers crossed that the Passion fruit comes through.

In my experience, you might be better adding the passion fruit elements of the brew after the initial cider fermentation has taken place if you want to get more of the fruity flavour coming through. The pineapple might make it very sharp as well, but saying that, I have a keg of TC with 16ltrs AJ and 2ltrs each of mango and pineapple and that is easily palatable.
Too late for this one but it's always an excuse to do some more. :D

Its all about experimentation with TC to find out what works for you. Good Luck with it.

Only just bottled the first one, but fingers crossed as the second one is underway, but swapped the apple juice for white grape and substituted pineapple & passion for apple. Oh yeah and put the fruit in after initial ferment (6 days in). Not sure how much conditioning is required with this either?

With Cider and TC the whole idea is to drink young but it does improve, if aged. Wine is somethnig I tend not to dabble in.
