Any Suggests for Next Brew? Badger Golden Glory
Re: Any Suggests for Next Brew? Badger Golden Glory
I've just had my first taste of a recipe that I've been playing with for a golden summer grapefruity ale. The grapefruit is barely noticable so back to the drawing board on that but (without tasting them side by side) I'd say the taste is similar to Golden Glory and is certainly very fruity, refreshing and summery and I will be tweaking this and converting it to all grain for the summer.
I used hops to try and get the fruity taste rather than additions. This was my recipe:
100g Caramalt (steep in 12L for 30 mins)
1.8kg Light LME
500g Wheat DME
400g Brewing sugar/Dextrose >>>>>>>>>>>>>> I guess you could use a beer kit enhancer instead of the DME and dextrose
25g Cascade (60 min) >>>>>> I used pellets so would adjust this if using leaf
25g Citra (5 min)
I boiled the peel from 3 grapefruit with the DME and dextrose and added the LME at the end of the boil. Then dry hopped with 20g Columbus for 7 days. I don't use a secondary, straight into the bottle at 10 days and conditioned for at least another 10 days.
I'm trying to figure out which of the hops is contributing most to the almost peachy flavour as it could be stronger. Also I will see if the grapefruit flavour is more evident after ageing otherwise the dose will be increasing.

Hey the citra hops will certainly give you your grapefruit flavour. I'd add a few more maybe, but they are pretty potent. I did an IPA with citra once and it really made my ears tickle with citrussy grafefruit flavours. It mellowed out after a while, but it was still very prominant. Gorgeous!
All the best with it. A clone of this beer is still on my ever expanding list of brews to do.
Cheers.

Well, I bottled my first attempt at this beer over the weekend. I had a slight problem though, I added the peach flavouring about 30 mins before I was due to bottle (some people do the same with spraymalt, but I prefer to put the spraymalt in the bottle first). Anyway the peach flavouring must have had some sugar content, as the beer started fermenting again! I decided to wait a day until the beer had stopped fermenting again due to that fact I was bottling these and was afraid the bottles would explode!!!!!! So a useful hint folks........... add the peach flavouring a day before bottling, or even easier: dont bottle use a pressure barrel or kegl!!!
Im going to wait a few weeks now before tasting........ Ill keep you updated!

Tried it over the weekend after 3 weeks in the botte. The peach was a bit overpowering, dont get me wrong the beer was nice, but you couldnt teste anything else but the peach. Im going to try it next with only 10ml of peach extract (not 50ml as ive put in this one).
Im going to leave it a few weeks and hope that the peach flavour settles. Overall not a bad effort I think for my first attempt!!!!

If I remember correctly, mine was a 20 or 25ml bottle. The aroma is fairly strong but not the taste. It's more peachy than your norman Golden Glory but I like it.

I agree with you on this, it is definatley more aroma than taste. Whereas golden glory tastes of peach aswell as smells of it slightly.
Neverthe less, it does taste good.

How many litres was your recipe?beermonstermilburn wrote:What do you mean by brew length?
Re: Any Suggests for Next Brew? Badger Golden Glory
25, but the yeild I got was about 19 litres
Re: Any Suggests for Next Brew? Badger Golden Glory
Luckily I still have some bottles of my golden glory clone left, its been over 2 months in the bottle and it really does taste excellent!
The peach aroma is now less intense and the beer itself tastes similar to golden glory, albeit a bit drier/more sharper.

Pleased to hear that. I really liked mine and I do tend to leave my brews in the keg for at least a month before drinking. I am definitely going to make it again but will probably put in about 3/4 of a bottle of peach essence.
Re: Any Suggests for Next Brew? Badger Golden Glory
I am drinking mine at the moment although I should really leave it for a couple more weeks.....But its too nice
Iused one bottle for about 54 litres and it is just about right

Re: Any Suggests for Next Brew? Badger Golden Glory
Just trying mine.....
Used 50g of dried elderflowers @ 15 mins before the end of the boil then chucked a 20ml bottle of peach vodka flavour into it before kegging.
Did a side by side with the real thing and while it's a nice enough beer in it's own right, it's just not " peachy " enough. Not sure if there's much difference between the vodka flavour and the schnapps flavour that other people have used.
Next time I brew it, I may leave the elderflowers out and use 2 bottles of flavouring.
I read somewhere that it's brewed with peach blossom extract, can't seem to find it anywhere though
Cheers Tom
