Californian Common yeast

Hi guys,

10 days ago I made a Californian Common (OG 1045) Using White labs San Fran Lager yeast WLP810.

Its now down to 1010 and clearer than the piss from an angel.

I am going to bottle it with 1/2 tsp sugar. Its so clear now that I'm worried there is not enough yeast in suspension.

Can you put my mind at rest and say I'll be fine and there will be plenty of little yeasties in there to condition it.

Rest easy, there will still be yeast present in the clearest of beers after 10 days fermenting.

i asked the same some time ago and yes its amazing how a little sugar brings the yeast out of hiding

Thanks guys, bottled today. Will it take longer than normal to condition due to there being less yeast in there?

It may but a nice long slow ferment will benefit the beer.

My beers fermented with Cali Lager (Wyeast) required over 8 wks maturation and overcarbed like any other lagers. I guess this is this "lager character" they write of on their webpage.
