Too early for Christmas?

Hey im thinking about starting a Brewferm Christmas as from what i read it needs a long time to mature in the bottle.Is 8 months a little too early or will it only benefit from the long time given to age?

If the OG is greater than 1060 stick it on now.

Yeah 1065 so im thinking stick it on takes about 3 weeks to ferment out.Has anyone done this before and any tips on tweaking it or should i just keep it simple?

Yeah, get it on now :)

Tip: This brew has to be bottled at 1.020 with no priming sugar, and finishes primary in the bottle.

I brewed mine last September for Xmas 2011, but it wasn't fully ready, so I've got 8 bottles put by for Xmas 2012 :)

Thats all i need to hear will pick one up today :) On a note though with bottling at 1020 and no priming is there extra yeast in bottle after maturing?

I wouldn't bottle early... You have no real way of knowing what the final gravity should be. If it wants to drop to 1015 or something, you will have bottle bombs on your hands. Let it ferment out and bottle then (priming as appropriate).

Yeah, you do end up with a bit of extra sediment in the bottle, but Brewferm yeast sets really well after a few months.

I didn't get any bottle bombs, and just followed the kit instructions. This particular brew is all malt extract and doesn't require any additional sugar for primary, so is always going to have a relatively high FG.

I just wish that I had doubled this kit up, as it only makes 7L.

Now thats something i had considered as well since home brew online are doing offer on it at moment.What temp did you ferment at?

I can't be 100% at what temp I fermented it at because I hadn't built my brewfridge then, but I was fermenting in the spare room upstairs, so it must have been 21-22C.

I didn't get anywhere near the quoted OG of 1.065 though, I think it was nearer 1.058.
