How long in the fermenter?

Post by Jules T » Tue May 15, 2012 4:55 pm

I've got a brew that needs to be started this week so it's ready in time for a party but i've realised that it clashes my holiday which means that it will sit in the fv for 3 weeks. I've only ever left my brews in the fv for a couple of weeks absolute max.

My concerns are once the initial fermentation is over:

1) Will it icrease the risk of infection?

2) Will the layer of CO2 on top of the beer disperse resulting in oxidisation?

3) Will the beer pick up any unwanted flavours from sitting on the trub?

Your thoughts and experiences would be very much appreciated

Happy Drinking... :D

It will be fine, I have left brews for as long as 4 weeks without any issues.

You might even find it tastes better for it.
