Fancy doing a Mild, what do you think

Fancy doing a Mild, I have knocked up this recipe, what do you think and any advice welcome.


Pale Malt 3000 grams 83.3%
Crystal Malt 250 grams 6%
Amber Malt 250 grams 6%
Black Malt 100 grams 2.4%
Chocolate Malt 100 grams 2.4%



Challenger Whole 7.9 % 90 mins 25 grams 83.3%
Challenger Whole 7.9 % 15 mins 5 grams 16.7%


Final Volume: 27 Litres
Original Gravity: 1.034
Final Gravity: 1.009
Alcohol Content: 3.3% ABV
EBU 23.0

Looks good to me but I'm not British and just made my first mild, waiting for it to finish ferment to keg it. I need to get a half pound or so of some Challenger hops. I just have some Fuggles and E.K. Golding for English hops.

When you guys put crystal malt, which color is that? GW's book does it too.

Looks good to me, but I'm another foreigner who has never had a pint of mild.
I do brew beers like this (but around 4%) and love the combination of amber and choc malt with challenger.

I'm not British either, but I like British ales; bottled a batch of bitter three weeks ago. I first tasted mild at a beerfest and went right out and bought the mild ale style book.
I had an all challenger beer one time and it tasted somewhat like goldings to me so if all you have is goldings you can use that. Challenger and godings go together very well.
When no color is listed for crystal the recipe is old enough that the only crystal readibly available was 40.
I'm just here for the beer.

Sounds good - similar to something I have done. Maybe up the aroma hops at 15 mins to 15g. But I'm no mild expert.

That's a good recipe. I do a lot of mild and a variation would be just leaving the amber malt out too.

Also, not doing the 15 min addition but uping the 90 appropriately would perhaps be more in style... There is little hop character in milds but it won't do it any harm leaving it in...

I just imagine a nice hop flavor of marmalade or orange (citrus) flavor balanced with the malt and yeast flavors. I tried adding some calcium chloride to try increase the malty flavors and control the yeast esters (which I really like) with temperature but had no challenger hops. Also trying to limit the higher alcohol which seem and sounds like to age to stone fruit esters (not a big fan of).

Well finally getting around to brewing tomorrow will let you know how it tastes in a few weeks. I do add calcium Chloride to all my brew as I live in a very soft water area. Also might lower the Amber and ditch the 15m hops

Maybe you could up the malt and get a lower attenuating yeast - will give more body and keep the alcohol down...

looks good to me, fwiw higsons mild has quite a few hops at 15.........
