advice on what to make with no input from me after 2 weeks?

no posts from me for months, then two in two days :D

in 2 weeks time i'm off overseas for 3 months. can anybody suggest what i could make in two DJ's that i could happily leave with no input until i get back?? would prefer if it didn't explode while i was away :wink:

I only have access to Tesco's and the Coop for ingredients.....

Brew something BIG, transfer it to a secondary the day before you leave.
I'm just here for the beer.

what exactly would you suggest as "BIG"- can you explain please? i'm still a "Rookie" too!

not considered maybe ordering kits online instead? Could do a wine kit, leaving it for that length of time is a tricky one.

I don't think you would end up with anything drinkable on your return....
There is always the chance that there could be a blow over and you come home to a smelly sticky mess that's been sat in a warm house or flat for months..

Not the sort of welcome I would want to come back to....

Why not wait until you get back?

Impatience is the curse of the newbie brewer.... As I found out to my cost...

Mead? The ancient orange mead might be ok that long, but if you do it, use wine yeast and NOT bread yeast - providing you dont want a buiscuty aftertaste, that is!

I'd do two wines, which if you start now will be fine for when you get back...

From the winesathome forum...

#1
1l grape juice
1l apple juice
700g sugar
1tsp citric acid
1tsp pectolase

#2
2l grape juice
1l of apple, blueberry OR cranberry
1.5tsp citric acid
1/4 tsp wine tannin
700g sugar
1 tsp pectolase

top both up to 4l to start with, allow initial fermentation vigour to subside then top up to 4.5l before your go on your trip...

When you get back syphon off into bottles or just get it drunk... The second one should be stabilised and sweetened a little before drinking (sweeten to taste) which really helps bring the blueberry/ cranberry flavour out (depending on which one you use)

A barleywine at 1.120, an imperial stout at 1.100.
I've done some big beers that stayed in secondary for several months.
I'm just here for the beer.
