Cider yeast fermentation temp

Post by badgerdan » Sun Aug 26, 2012 7:23 pm

I've got some standard Young's dried cider yeast i'm going to use up on a turbo cider but my cellar is at 17-19c would this be too cold? I could wait a week or so and get it in a box to keep it warmer but would prefer to get it going now if it'll be ok :)

Alright Dan,

I can't imagine you'll have much trouble with that temperature range, might take a day or two longer to finish out but I'd say just get it on the go and see what happens. It'll surely be drinkable whatever!

Youngs cider yeast is actually a champagne yeast and will ferment at low temperatures (e.g. 10C). Cider is best fermented at low temperatures anyway, in order not to lose the aromas from the apples and the yeast.

Aha, that's interesting then :) Had actually found a nice spot on my water tank which has been at 20-21 since yesterday but now I guess my original place may be a bit better :)

My dad would say colder the better - indeed, when we had a freeze-up in the garage a few years ago (real cider) it seemed to improve it.
