i made a batch of regular cider for the mrs yesterday, and had 4l of juice left i couldn't fit in the FV. today I had a bright idea and dug out a demijohn. I'm trying to make cider that's a little like apple pie.
4l of apple juice, 300g cane sugar, a cup of REALLY strong tea, a few drops of vanilla essence and a cinnamon stick.
i boiled one litre of the apple juice to dissolve the sugar, put the cinnamon stick in there and boiled slowly for 20 minutes or so to ensure it was sterile.
i put the other 3l of apple juice in the demijohn, added some yeast nutrient and shook the hell out of it.
put the tea and the boiled apple juice with cinnamon stick in and left to cool. i left the cinnamon stick in as i think the cinnamon would disspiate if i took it out
pitched the yeast (some generic ale yeast i had kicking about) and stuck the demijohn out of the way.
i have NO idea how it will turn out, but it seemed like a good idea at the time.

i pondered nutmeg, but thought it might be a bit ovrpowering if left in the fermenter, and may not stick about if it didnt make ti to the fv. i might have another go if this lot doesnt have the desired effect

I wouldnt have bothered boiling the juice as the yeast will eat the sugar and its therefore not necessary.
Hows abour 2 or three cloves? That would do it!!!

was more to dissolve the sugar and sterilize the cinnamon, i reckoned the yeast would eat the sugar easier if it was dissolved.

well, the pieder is bottled and lightly carbonated. it's not bad, but i think it may improve significantly with age. theres not a lot of the cinnamon coming through, but the vanilla is very much there, so if i make it again, i'll add more cinnamon and less vanilla.

I'm yet to make a TC as yet, but the other day I had a day off with my lad (he's 4) whilst the mrs was at work, we decided to do some baking as we have a few apple trees, I made a tart tatin whilst caramilising the sauce and tasting it, I thought wow that be really nice in a winter warmer ale it was a dark rich sauce as I changed the recipe slightly insteaqd of brown sugar I used black treacle which gave it a toffee apple favour almost, as it happed I caramised it too far and ended up with a very thick treacle that got binned, the tatin was nice in it's own rights without the sauce. So my plan is to make the apple tart tatin again and pour the slightly reduced juice from that into my first TC which will hopefully give it depth and flavour I pie and cider in one stone!

I really need to get a scratter and press sorted out in the long run me things I say it every year since moving in around this time when I see the trees full of fruit!

My local HBS hires them out for the day, you could try asking your own. Around the £20-25 iirc.
