hoegaarden wit clone ideas
Hi , im about to brew hoegaardenish clone , after browsing around net ive put this together
a recipe.
Any help would be appreciated from any one who has done some brew similar in the past
as i think a few ingredients may need tweaking

Ingredients:
1 can Muntons wheat kit 1.8kg
1.5kg Dry Wheat Spray Malt
250g dextrose
15g Coriander seed (Lightly Crushed)
15g Bitter Orange Peel (Curacoa peel)
1 Pkt of Brewferm blanch Yeast
a recipe.

i haven't done a hoegaarden clone before, but i would consider more dextrose (may i wash my dirty mouth out) and less wheat DME.
just thinking it may come out a bit heavy as is what with all the wheat, can't remember hoegaarden being too heavy.
had a bottle of erdinger the other day, way too filling with the wheat and high carbonation.
oh and get some saaz in there!

Hello. I've done very similar, with Coopers wheat kit in my case. The wheat extract & dextrose amounts are fine, I've used just wheat extract & a similar amount to your suggestion & both have been great. I would double those coriander & orange peel amounts though, it will still be subtle & most of the citrus flavour actually comes from the coriander according to the Hoegaarden website.
The most important thing in my experience is the yeast. I don't know anything about Brewferm yeasts, I believe the "actual" Hoegaarden yeast is Wyeast 3944 but I got a near perfect clone with the much cheaper WB-06 having got something very bland the first time I tried using just the kit yeast.
Good luck! Make sure you brew at around 24 degrees if your yeast supports this to get some nice ester flavours in there to balance the citrus.

Thanks lads, some good suggestions there , saaz or halertau hops dry hoped ? when to add coriander and curacao peel ,is 2 days before ferment ending ?or when adding dextrose, dme etc...?

I boil up the coriander & curacao for 15 mins then add with the extract & kit. Would be interested to know how the timing would affect the flavour - maybe it would have a different effect if added to the FV at the end, sort of like dry hopping. I tried dry hopping with amarillo, it wasn't necessary & even 30g got a bit lost, there's a complex enough flavour already.

thanks Duffy , i might try a bit at start say 15g and 15g af finish as i hear flavour can be lost through fermenting as you also stated , same as with hops etc dry at end is always stronger aroma , best drank young as spicey notes degrade with time in bottle/keg aswell i found this with all the wheat beer kits so far .

Hi , in a very good book i own called (The Complete Joy of Homebrewing )
Writer Charles Papazian states in his Hoegarrden clone along with 15g coriander crushed in boil with the 25g curacao peel to also roast enough coriander seeds to allow one seed for each bottle to give extra flavour , he states by roasting first releases traped flavour has anyone tried this before ? i might give it a go just for curiosity really as its my 1st try , and then improve recipe were required ?

Hi, first off let me apologise for this, I am brand new to homebrewing, when I do this it will be my second ever brew. This sounds like the sort of beer I want to make for the summer!! I have got a coopers FV (with the krausen kollar and no airolock) and I am going to get a standard FV in the next few days.
I just want to run through this so that I know I am doing it right, any pointers will be gratefully received.
Boil up 2 ltrs of water and add the wheat spray malt, beer kit and dextrose, add the seed, orange peel and hops in a brewbag and boil for 15 minutes. At this point do I bin the seed, peel and hops or place it in the FV? I would have thought bin it?? Transfer to the coopers vessel and top up to 20 ltrs sort the temperature and top up to 23ltrs, pitch the yeast (would you stir the yeast in or leave it on top??) and ferment for 10 days. After 10 days, transfer to a second FV and leave for another 5 days. take a reading on the last 2 days in the second fermenter and if it reads the same for the last 2 days transfer to bottles. Carbonate and the store in a dark warm place for a week and then move to a cooler pace for a couple of weeks and then chill and enjoy!!
Once again sorry for asking all this, just don't want to cock it all up!!!

It makes a very refreshing Drink

After 10 days, transfer to a second FV and leave for another 5 days.you can add more boiled orange here as to balance out the coriander a bit as mine was a little over-powering ,but mellowed with time
take a reading on the last 2 days in the second fermenter and if it reads the same for the last 2 days transfer to bottles.

Just one final thing?? Is the idea behind transfering to the second FV just to leave a lot of the sediment behind and let the fermentation end?? I take it I don't have to end finings to this as a wheatbeer is cloudy?
