steam beer

Hi all

now it getting colder i have started brewing steam beer at temps between 10-15c the first batch is sitting in a sealed keg,do i prime and leave to condition in the loft or transfer to cornie and force carbonate with c02,i can not use fridge as i am brewing my ale in it,thanks for advice in advance.

I might give this one a go. Can't do a true lager due to lack of temperature control but the house is cool for most of the day.

It's entirely up to you the brewer: your preference and your capabilities for temperature-controlled lagering. As Barley Water has written, today's steam beers are all judged against Anchor Steam, but since we're talking about a historical style warm fermented with lager yeasts in open fermentors under diverse, almost primitive brewery conditions, I'm sure the resulting hybrid beers varied widely. The longer and colder you store your finished beer, the more closely it will resemble true lager beer. At this time of year, I don't bother with refrigeration or anything. I'd recommend setting it in a cold corner of your cellar, shed, etc for as long as you can stand. Or not. As I say, it's up to you.
