Weapons Grade HS Cider (and HS doesn't stand for "High Strength" ;))

Starting Gravity: 1162
Color/ Cloudiness: Brown
Environment: Left at room temperature.
Temperature left at to ferment: ~15C
Progress report:

Gravity: ~1140
Colour: Clearish brown
Taste: Very sweet
Bubbling approximately once every 4 seconds.

How long do you think this will take to ferment? Taking all bets. :P

WOWZA!!! That's going to be a seriously sweet cider! You're operating right on the yeasts limits so who knows how long or if it will ferment out as you'd expect. Even after fermentation, I wouldn't expect to be drinking it for 12 months or so.

Was planning to drink it straight off once it finishes fermenting to be honest. And I prefer sweet to dry personally. Using the Gervin GV-4 high alcohol wine yeast.

Right now a calculator puts it just under 3%.

Like I said - it'll take a long, long time to ferment - the sui-cider took nearly a month but it got there in the end - the GV4 is hardy beast :)

It did end up sweet and as OB said, i'd reccomend you let it sit for a few months before trying to drink it - but its your cider, your way :) you'll know when you try the first bottle what you want to do with it.

Remember to bottle BEFORE fermentation ends if you want any kind of fizz - at the strength it'll be, secondary fermentation isnt really an option (you could force carbonate if you have CO2 and a corny)

Got 2 cornies, 2 handpumps and a 6kg CO2 bottle. I'm looking forward to christening one of the pumps with this stuff. :) Also, I'm unfortunately in student accommodation and I can't really leave things hanging around for too long, as much as I'd like to do so. When I moved out of student accommodation in my first year, I had so many bottles that the car was completely weighed down by beer I was conditioning.

Just rustled up this one as the Welch's Juice was on a half price special at Morrisons:

3.5 ltrs of Welch's Grape & Raspberry Juice
1 ltr of Welch's Grape, Pear & Apple Juice
200g brewing sugar
1 heaped teaspoon of champagne yeast
1tsp Pectolase
1tsp Yeast Nutrient
1tsp Wine Tannin

SG: 1.065

Um, mostly grape, not really a cider - just a rather low-alcohol wine...

At last Lambrini isn't as bad as Iceland's Chardolini...

It was 10.8kg. :P

The OG was 1162. I've worked out the cider should come out around 13%.

Has anyone tried back sweetening TC with cologran - the cheap artificial sweetener from Lidl. It apparently contains saccharin and cyclamate! Never used it before but bought some today to try it out - Just wondered if anyone else has used this before and how much?

Yep, use it all the time!
I use the whole jar in a 20 odd litre brew.
All comes out fine!

Thanks for the info troutman. What do you define as fine tho'? Sweet, med-sweet, dryish?
