overhopped beer advice needed

well what turned out a good brew day and subsequent ferment i finally realised I'd made a grave mistake as us rookies do. all grain # 12. I bittered 40 litres with 90 ibus, entered wrong in beersmith as the lower alpha acid Columbia should have been Columbus 14 % + #-o
I split the batches California common style with whitelabs yeast in one and nottingham in the other. 2 weeks in the kegs now and theyre grossly overhopped for my taste buds. whitelabs yeast dulling the hops somewhat, is about the best. I know you'll say give them time but I really don't like bitter beer

so my question is can these be rescued what's the best methods, don't have the luxury of blending as all cornys are full, anything I can add....I'm unsure. [-o<

In short no. Underhopped yes. Overhopped no. Sorry.

Oh dear, a tough lesson I'm afraid the drain beckons, but as you say your cornies are all full :D

Hops fade over time with and alpha acids can settle to the bottom and sediment. I'd bottle both the batches and give it 6 months. Might turn out really good. make sure you leave all sediment when you pour.
If you can be bothered finding out I've heard John Palmer give a number on how much bitterness you lose over time on one of his podcasts.

Definitely don't tip them. Bitterness will diminish with time but more than that the beer will mature and you may find that the bitterness becomes more balanced.

Empty one of your cornies, I would use the least favourite of a similar style, and syphon into a bottling bucket mix with the over hopped batch and re- fill the cornie and enjoy.

If you haven't got a corny free you could put them in a secondary and store in a cool garage for a good few weeks. Maybe a month.

suppose u could always up the abv artifically with some vodka/ spirit of choice (maybe having had some hops or oak in it, even vanilla essense) this is meant to balance the bitterness like in an imperial ipa etc,
of course test this in a glass before commiting the bottle

You could make another under-hopped batch and blend them.

Give it time. Back in '04 I brewed an English style barleywine that I entered into a compitition. It scored in the mid 30s and made the top 20, but was dinged for being "too hoppy for style". A year later it scored in the low 40s and took second place.

There is a very old remedy for adjusting over-hopped beer, which is to add liquorice extract. Draw a pint off and add a small measured amount until the taste seems right then scale this up to the full brew. This was a trick used by breweries before the advent of precise alpha measurement.

wack some malt extract in it let it ferment a bit more, make it a heavy imperial. the malt and the hops should complement each other, then leave it for a while
