Invert Numbers

Does anyone know where I find the invert numbers for sugar? I'm looking for light brown and molasses.

I don't think you'll find an exact match of the type you are looking for. Have a look at this and I'm sure Ron P has other info. about invert sugars.

What they said if you want to make it, you can't buy it as you have to buy it on an industrial scale it seems

I have used this before, and only used the golden syrup and blackstrap combinations.

I recently made No.2: 1 litre water bring to boil, slowly add & dissolve 1 kg demerara + 100 gms glucose, when sugars dissolved add 2 ml 80% lactic acid. Boil off the water then keep the syrup in range 115-118c for 2 hrs. Don't add water, just turn the heat on and off to keep temperature. This gave me 1.1 kg of nice dark brown syrup tasting of dried plums, figs and other dark fruits.

Highly recommended.
