First 1 gallon extract batch with DME - Stout
I've bought a few bits from my local home-brew shop, and I'd like to start out with them by making a small (and expensive!) 1 gallon extract batch of stout in a 5 litre water container. I've only made kits so far, so this will be my first experimentation with extract.
The ingredients:
400g Munton's medium DME
150g Corn sugar
100g Chocolate malt + 30g Black malt (that I will crush with a rolling pin)
100g Malto-Dextrim
10g Challenger (for bittering)
4.6 litres of water
Process:
* With 3.6 litres of water, for the grains, follow Daab's extract instructions at: http://www.jimsbeerkit.co.uk/ingredients_extract.htm
* Remove grain bag and bring back to the boil adding the DME and corn sugar.
* Once boiling add the hops.
* Boil for 45 minutes, then add the Malto-Dextrim, then continue the boil for a further 45 minutes.
* Move pan to sink full of water and cool. (As it's a stout I'll just use cold water with no ice for the cold break).
* Pour into fermenter (water bottle) filtering the wort through the hops (by way of a sieve / or possibly a tea strainer).
* (Not sure on the gravity, so:) Top up the wort to 4.6 litres.
Now treat as a diluted kit, and ferment in the normal way using 1/3 of a packet of re-hydrated Safale s-04.

What do you think? This is based on the 'Mackeson stout' recipe in 'Brew classic European beers at home'. But I'm a bit worried that I'm being a bit stingy with the DME, and not being stingy enough with the Malto-Dextrim!
