Have you tried the Mikkeller single hop series ?
The same base grain for each beer but one hop for bittering/flavour/aroma/dry hop ?
I believe there are nineteen now, i've tasted quite a few.
My favourite was either the citra or simcoe.
2months ago I brewed a beer with 100g late Simcoe and some other American/ NZ hops and it went down really well.
On sunday, I brewed a beer like you propose. A citra IPA with Apollo for bittering and 100g late Citra. I will dry hop with another 50g Citra too.

To be honest I find single hop beers are never quite as good as blends but I always feel compelled to brew them every so often to understand the flavour of a particular hop...
It's a pity I couldn't swap your Simcoe beer against my Citra beer...

If you see my post "Saturn V" thats all apollo, made it a few times with little tweaks here and there, one of my faves, disappointed when I tried this with amarillo tho.

I did. It's what made me bitter with apollo in my citra IPA. Felt it would add something to the beer without overpowering the Citra if used for bittering.

Totally agree about single hop amarillo being disappointing. Cascade too (though maybe not NZ Cascade)

+1

Another way of asking "Would Magnum and Simcoe work well together?" would be simply "Is Simcoe good stuff?". What I mean is that you should think of the early Magnum addition as pure and simple hops bitterness, to balance the malt sweetness. That's it, Magnum contributes almost zero distinctive flavour/aroma, it just does all the thankless heavy lifting for you. Thus, it's a perfect way to profile the characteristics of your chosen late addition, more intense flavour/aroma variety (without having to waste lots more of your special hop achieving the obligatory bitterness.)

So, my answer is yes, Magnum is a great way to achieve non-descript bitterness and Simcoe is an awesome choice for flavour and aroma. Best of luck!

Did you try the Kernel Brewery Magnum & Simcoe? That worked really well, I plan to give that a go myself at some point.

So I tried this;

23l
5.500. Pale malt
400g Munich
200g crystal
200g terrified wheat

Magnum 10 g 30 mins
". 25g. 15 mins
". 25g. 5 mins
Simcoe. 25g. 5 mins
". 25g. 0 mins

The wheat looks pretty scared!

I use magnum all the time as my bittering hop with a flavour addition later on in the boil. As posted, magnum leaves no, or very little, taste so you are essentially brewing a single hop. Talkng of simcoe, I recently had a simcoe blast by alechemy out in livingston. It was lovely and I will be trying to replicate it at some point. The head brewer gave me the hop profile and the og which was very kind of him. If you want I can share it but you will need a lot more hops to make it as it has a crazy, to me, dry hop addition.
