Recipe suggestion

So after a break of over two years of beer making I've finally decided to return to the flock :D

Ended up with a bit of a disaster as two of my boilers that had been left in a damp garage refused to work. One almost set on fire and the other kept tripping my fuse box. The hot one is now in the skip and the other has been rewired by an electrician friend.

Sooooooo I have around 10kg Maris Otter, 2kg caramalt, 500gm torrified wheat and a s**t load of Pilgrim hops with an AA 11.24% that I've acquired. I also have some fuggles, around 200g, that have been stored in my freezer, vacuum packed for over two years.

Are there any suggestions to use the ingredients that i have? I'm looking for lots of bitterness with hop aftertaste. Is this achievable with these hops? I'm a big fan of "smack in the mouth" flavours like "Brewdog" beers so was thinking of a long boil with lots of Pilgrims and a good load after the boil. A single hop brew but using lots of them.

What do you reckon?

Any advice or suggestions would be very much appreciated :D

Pale to an OG of say 1050.
Then say 150g wheat.

Hops to around 95% of whatever ibu you want at 15minutes. So no 60minute bittering . 5%ibu @5minutes and whaever you have left of the pilgrim for a long steep.
Use a neutral yeast. So notty maybe.

Whilst there's nothing wrong with the hops that you have, they're not really "brew dog style" hops. You could a hoppy English style IPA or a good old English bitter or ESB but to make something resembling 5 AM Saint, Punk IPA or Dead Pony Club you'll be needing some American hops. Yeast selection will also be important, you'll want something neutral that will let the hops shine.

I guess I should have also said it would be a 5 gallon brew

I think rather than trying to do something full of bitterness I'd be best off concentrating on getting a normal bitter sorted.

I'm trying to get my head back in the game and was thinking that these pilgrims with their high AA of 11.24% would give me something of a smack in the gob bitter if I used lots of them. I have a couple of kg of them so would be willing to chuck a fair few in the boil just to see how it tastes :)

I was in work when I posted originally so probably not the best of times for thinking about something I haven't been able to do for a while :)

Anyway, cheers for the advice

Andrew
