suggestions for late hopped ipa
Guys
I am looking to make a late hopped ipa early in the new year that will be drinkable around mid may.
I would live some suggestions please.
I am not a lover of the hugh citrus type hops like cascade. I think personally these are over used and i have kind of gone off them.
I have most malts and can get whatever hops i need from rob. . The brew will likely be bottled.

For late hop beers I would suggest that whatever hop you choose do not use crystal malts in your recipe. I think that crystal does not compliment hop aroma but instead tries to compete with it. I put Jaipur forward as an example of a good beer that resists using crystal and instead lets the hops shine.

I think this depends on which crystal, amounts and also yeast.
As for this thread i don't think the grist is the problem as i had originally intenden on pale and a little wheat. Am thinking more about the hops. Might try one of the experimentals i have on the way through as a single hop brew.

Gone off citrus hops eh?
How about something like 96% PM, 2% caramalt/caragold and 2% wheat. Bittered with Delta and Chinook then late hopped (15 mins) with Chinook then steeped for an hour with more Chinook. Use a hop forward yeast.
I'd still be tempted to steep 30g of Citra to add even more aroma.

Yes have gone off the citrus hops a lot. A brewpub here had a tasting session 8 beers including stouts wheats and english bitters.... all with masses of cascade and a stout with nelson. Was awful. Put me off. The grapefruit tastw was way harsh. So i dont want to use them for a while.

The main problem with cascade hops is that everyone seems to use them as an attack weapon instead of a negotiating tool. A couple of years ago I had an APA at a beerfest that was really good. I asked the brewer which hops he used: centennial and cascades was the answer. He kept the hops in balance and made a great beer with cascades.Deebee wrote:Yes have gone off the citrus hops a lot. Exactly. I think the cascade is just too overpowering.
So right now i want to stay away from them chinook nelson etc.

Exactly. So imagine high bittering with citrus hops in beers og under 5%.
They all tasted the same. And for a day afterwards i tasted the hops if i burped... so... no citrus hops here for a while.
