Which are the best
Which are best fittings to use in my boil kettle. I.e brass copper are stainless steel

Whats your definition of best?
Stainless Steel would be preferable, but I think unless you are making your whole system stainless there is not a great benefit apart from aesthetics. The benefit of stainless is if everything is the same it makes your selection of cleaning chemicals easier as you don't have to worry about what they might do to brass or copper.
Personally I use Brass and copper fittings as they are cheaper, slowly I will replace it all with Stainless when I have the money.
