I am getting the bits together to update my brewing kit. I will be going all stainless and have it permanently fitted in the garage. I intend to use (and have ordered an STC1000, I will add an external relay for controlling my boiler temp. This comes with what appears to be (in the pictures) a temp probe which looks plastic. I doubt this is waterproof, would you advise a thermowell or a replacement probe? If a probe which one?
