I'd have thought the water bath would be fine, though I do wonder if it has a second thermostat on the compressor to stop it overheating?

No, the starts the compressor and the cooling fan is controlled vis the same stat. The agitator is always on. That's seems all there is to it.

does the pid your using have a compressor protection delay capacity?? if not u cold find it will quickly kill the chiller!!

my chiller (with water) only needs a short run to bring the water bath temp down to 0C when i turn it off for the evening as it holds enough cold for a few pints.. so having the agitator running independently of the compressor is a good thing as ithe agitator ensures beer running thru gets the maximum chill, without it a warmer pocket of waterbath fluid will surround the coils,

Conditioning: nowt
Maturing: Challenger smash, and a kit lager
Drinking: dry one minikeg left in the store
