Mash temp came out too low

I got my water upto 75c then added it to the grain but after mixing it all it came out at 58c :( my grain wasn't that cold so don't understand. I boiled a load of water but have only got it upto 62, can't add anymore otherwise i'll go over my final amount.

Will it just be a dry beer or is 62 just way too low?

Rule of thumb: More Alcohol Lower Temperature.

So if the temp was high enough to extract the sweet goodness, I would think it would end up quite dry, yes.

Well, after an hour it seems to have not converted much, only readin 1.025 instead of 1.059 :(

So as my grain's in a bag, can i put the wort in my kettle, heat it to 65 -68 them put the grain back in for 45 mins or would this just leave a crappy beer, so best to dump it and start again?

Shit sorry, false reading, i forgot to stir the wort so took a sample from the top half. It's actually 1.055

Amazing how the concentration of wort can vary and take quite a bit of mixing. Don't know about you but I also find the temp of mash hard to take, seems to vary quite a bit as I move the probe around.

It takes a while for temperature to even out - the probe might say 64 when I prod it in, but if I put the lid and insulation on my mash tun when I next check it'll be 66.

Adjust the strike water temperature upwards, mix everything really well and then just leave it.

If you have a tap on the bottom of your boiler then I find it's best to drain from the bottom and add back to the top to mix the wort/mash correctly and to stop the layering that can happen and throw temps off significantly.

It's basically just manual recirculation, but I find it essential to get accurate temps.

Well, i've just mashed again with a slightly higher strike temp and low and behold it's feckin low again :( i just can't control this. Next purchase will be a proper mash tun so i can mix it all properly and get better insulation.
My last two low mashed beers were nice though, just on the slight dry side :)

Are you pre heating the vessel you are mashing in. A cold mash tun can really pull the temperature down.

Yup, this brew session was a sudden "yes i have time to brew tonight as i'm away at the weekend" thought and it all went a bit too fast. Oh well, as i said, my last two low mash brews were in fact very nice. Was hoping to enter this in the sjpoor challenge but i'm not too confident now.

Yep, drop the hot water into the tun about 10C over, the temp in the mash tun will be a few degrees over strike, then wait for the temp to come down to strike temp. A tip from somone on hrre was to use a catering thermometer with an alarm, so you don't have to babysit it whilst the temp drops. With knowledge of your system you can get within a couple of degrees, so not much waiting.
