Day 8 - not dry hopped yet, still on original ingredients.

The gravity is now around 1014, Im not used to this 'gloopy' top to the beer, almost like a toffee, is this from boiling the LME?

Heck, I'd sanitize a spoon and skim a bunch into a sanitized jar for next brew. True top-cropped English ale yeast!

No really, it is now, that's my point. "West Coast Ale" may not be exactly English anymore (though most of those US ale strains are English and Scottish in origin), but in any case it's a top-fermenting ale strain and if you "crop" the healthiest, most vigorous cells from that krausen at the peak of primary fermentation, you've just created the ultimate starter for your next brew.

Phew! Transfer on day 10 tomorrow onto the remaining Citra hops in a few FV for 4-5 days before bottling :)

Siphoned onto 50g remaining dry hops of the Citra pellets, these hops smell so good!

4-5 days and bottle, loving the smell !
