I'm doing my first all grain brew at the weekend and need to know roughly how much hot water to add to my mash tun is there a set amount per quantity of grain ?

Also I'm doing a dry stout do I need to adjust my water hardness I'm on the south coast Littlehampton my water
Is 255 CaCO3mg/l

For a stout you want water high in calcium bicarbonate, which is almost certainly what you've got. It's hard to be sure without more info about all the relevant ions in your water, but I would guess you're fine to go ahead without any water treatment.
