Out of date Yeast

Out of date Yeast

I was on the Malt Miller site today and noticed that he had some Yeast Bay Wallonian Farmhouse yeast on for £1 because it's past it's best before so I bought 2 vials.

Now I plan to make a saison in the new year so thought this yeast would be good for it. I have never used an out of date yeast before so I know I need a starter.

I have got 2 vials, a stir plate and a 2000ml flask so do people think is the best way forward?

Sounds like a good plan to me. Boil-up a moderate strength wort, cool, pitch both vials and leave it on the stir plate to work. You should see fermentation activity within a day. Once it ferments out and flocculates to the bottom, carefully decant the beer into a glass for your enjoyment, and repeat. Pour a fresh wort on top of the now enlarged yeast population. If you're really good, you'll time your brewday such that this next yeast starter is at high-krausen, then you can just dump the whole thing in your full-batch fermentor.

If unsure make it 2 step starter, first 250-300 ml then 2 litres.

One thing to be careful with The Yeastbay vials is that a lot of them are blends. Some of them aren't but for those that are making a starter can lead to a different proportion to the strains and therefore a very different character to what you were hoping for. They recommend direct pitching for most of them because of this.
