Hi all, I have some Bramling Cross hops and was going to adapt my partial mash Golden Ale recipe to use them. Am I going overboard here or should it be Ok? I have never used them before but I an keen to try more British hops in my beers...

35 g - Fuggles, Type: Leaf/Whole, AA: 4.5, Use: Boil for 60 min, IBU: 10.4
40 g - East Kent Goldings, Type: Leaf/Whole, AA: 5, Use: Boil for 30 min, IBU: 10.15
30 g - Bramling Cross, Type: Leaf/Whole, AA: 6.5, Use: Boil for 15 min, IBU: 6.39
30 g - Bramling Cross, Type: Leaf/Whole, AA: 6.5, Use: Boil for 0 min
20 g - Bramling Cross, Type: Leaf/Whole, AA: 6.5, Use: Dry Hop for 5 days

I don't think that's overboard at all. I recommend more people try using English hops like they would New World varieties: large late additions to dramatically increase the bold flavours and aromas.

Yeah but I still feel like I am fudging it as I go along working out what works. ... The base recipe was one that I brewed for my brother and that came out really well but used East Kent Goldings. ..

I am getting this on tomorrow but have just checked stocks and don't quite have enough torrified wheat... Gonna throw some flaked maize in there instead for head retention....i am sure that will be Ok. ..

Looks like you had a good brew day, Bramling Cross are one of my favourites! I use them in an IPA I make with Goldings and Fuggles.
Going to use a new favourite tomorrow, Chinook, in a smoked ale, lovely hop!

What are you using for the smoke. I had a bottle of Dirty Stop Out stout from Tiny Rebel brewing company the other night which had a really subtle smoky bacon note to it. They use a smoked German malt from Bamberg. Reckon it would be easy to overdue it....

I used Rauchmalt, bought from the Homebrew shop.
It's a German malt smoked over beechwood, expensive but well worth it!
I used 20% of total grainbill and the smokiness is spot on for me.

Ok OP, this is the original recipe.
Brew length 23l
OG 1.043
FG 1.010
ABV 4.3%
IBU 22.1
EBC 20.1
60 min mash @ 66C
Pale Malt 2.724kg 64.5%
Rauchmalt 871g 20.6%
Med Crystal 630g 14.9%
Chinook 12%AA 16g (all of boil)
Boil 90 mins
Gervin English Ale yeast. Seymour advised using a neutral yeast so I used Gervin or use Nottingham.
Now this tastes great but I'm changing it slightly, only because of the colour I'm after. this is my revised recipe.
Pale Malt 3.114kg 68.1%
Rauchmalt 935g 20.4%
Med Crystal 456g 10%
Carafa Special3 68g 1.5%
Everything else the same.
I've used Carafa Special 3 because it's old stack I need to use up, Roast Barley will do the same.
Let me know if you have a go at this, its a lovely beer!
