I too have a keg of 70/20/10 on the go at the mo. I've brewed it many times and tend to use Notty/Gervin yeast, though I have used WLP004 a couple of times to good effect. I'm off liquid yeast at the moment until I build a stir plate for making starters. For hops, I've used 1:2 Bullion and Northern Brewer to 45 IBUs with excellent results. In fact I compared a glass with a bottle of genuine Guinness a week or so ago and was hard pressed to tell the difference. I'm inclined to agree with Eric that the Roast Barley probably contributes much of the bitterness. If you want to be as close to Guinness as possible I wouldn't think of using any additional ingredients.
