hi all
a friend an i are brewing a stout "enter the dragon stout" from this site
http://www.homebrewandbeer.com/ourhomebrews.html. its comeing to the end of first fermentation and i have a couple of questions for the forum

A)
If i filter through a paper or gauze filter will there be enough yeast in the beer for it to second ferment in the bottle

B)
Can i put the bottle priming sugar into the beer in the fermenting bin give it a little stir leave it for 1/2 hour then bottle without the need to ad sugar to the bottles if this is possible how much sugar do i add to a 40 pint brew

C)
If i cant do (B) how much sugar do i add to my bottles i am using 500ml
bottles and 2 ltr bottles

Hi Gm - the link is faulty, remove the full stop at the end and its ok.

Filtering like this will probably remove most of the yeast, if not all of it, and you won't get any secondary fermentation in your bottles. no matter how much primings sugars you add.

Surely a stout doesn't need any filtering.

80g sounds about right, to much carbonation in a stout does not go well with the roast malt

Last time I bottled - I bottled all but 1 in glass bottles, 1 I bottled in a 500ml clear Coke PET bottle so that I could feel how much pressure there was building up by squeezing and also see how clear the batch is getting over the weeks. You can also drink this test bottle providing you store it away from sunlight. 8)

I've found that some brews take longer to ferment out than others. The only way you can be sure that fermentation has finished is to take a gravity reading. After 2-3 days, take another reading, if the 2 are the same then fermentation has finished. If they differ, obviously you still need to wait....
