Hops to use in a Russian Imperial Stout??

Post by DC » Wed Nov 11, 2015 12:59 pm

Hi all, I am looking to start another Russian imperial stout and I am wondering what sort of hops I could use :?: I have brewed and RIS a few years back and I used Challenger Hops. Just wondering which hops out of the list below would be ok for a RIS apart from Challenger??? And also in what sort of quantity? I will be using roughly the same recipe as before for a 10L Batch

Current Hop Inventory

Northern Brewer 3 x 100g 1 x 44g
Challenger 1 x 57g
Willamette 1 x 21g
Target 1 x 75g 1 x 31g
Magnum 1 x 63g
First gold 1 x 40g 1 x 100g
Saaz 1 x 19g
Stella 1 x 56g
Nelson Sauvin 1 x 54g

Previous Russian Imperial Stout Recipe

10L Batch

PALE MALT 3000g
AMBER MALT 1000g
BLACK MALT 150g

DARK BROWN SUGAR 500g added during the boil

Boil time 1 hour 15 minutes

27.7g Challenger Hops (That’s all I had left)

You are looking for bitterness rather than any aroma or flavour here as your RIS will overwhelm any of that so choose the Target more than likely. Not the Nelson Sauvin though, they probably would add an unwelcome or at least odd flavour. they're expensive now too!
I used Pacific Jade in my last few RIS stouts, worked nicely.

Yes, Target would be best. Last one I did 2years ago was around 80IBU's. You could always add some First Gold at 10 minutes to give it a bit more hop profile.

Can't be arsed to keep changing this bit, so, drinking some beer and wanting to brew many more!
