Seymour Citra Gold - starting tonight/finish tomorrow

I'm just about to have a crack at the legendary Seymour Citra Gold. My overnight mash is about to go on with the Tun warming up nicely awaiting to receive the grain.

I'm also giving Maris Otter a go tonight - I normally brew with Golden Promise and it's the first time with using Porridge Oats in the Mash so I'm interested to see the mouthfeel results!
I am a stay at home Dad turned professional brewer. I run a very small cuckoo brewery in the Cotswolds which specialises in Gluten Free beers.

I'm planning on making the Seymour Citra Gold as well, but first, I want to make Seymours Deuchars Clone. I see you have one that you're currently drinking... how did it turn out?

The Deuchars Clone recipe is one that was supplied by the head brewer at Caledonian and I have to say it is absolutely spot on, great drink and definitely worth a brew. I haven't seen Seymours recipe though for comparison.

I don't know why all that wheat malt is there, it's a typo I assume? The link in the homebrewtalk thread with the email from the brewer has between 3 to 5% wheatmalt, not 35% so I assume that's where it came from :)

The grist for the one I have that was taken from the email from their brewing director is

Golden Promise 85%
Invert no2 - 10%
Wheat malt - 5%

So the Seymour Citra Gold is smelling great and now tucked up in the brew fridge. But this was my first ever brew with pellets, it will be my last as well due to the horrible sludge that is created from them and having to syphon the beer out of the kettle to try and avoid 'some' of it going in the fermentor.

Apart from that the brew went well, I had to add more water than the Beer Smith calculation for Batch Sparging suggested but it worked out OK and I just had to liquor back with half a litre of water to hit the OG

I can't wait to taste it now!
