Hi all,
I want to make an American IPA using crystal rye malt and citra hops.
But what will be the best liquid yeast to use?

This is the planned recipe:

MO 5k
Crystal rye malt 300g
Black malt 100g (probably put in for 15 mins in the batch sparge)

Citra AA 15%
15g @ 60 mins
20g @ 20 mins
53g @ flame out
112g dry hop for seven days

Wyeast 1056 or the White labs equivalent.
I'm just here for the beer.

I like WY1272 American Ale as enhances fruity hop flavours at higher fermentation temps. Keep fermentation cooler and its clean and citrusy. Flocculates better than other american strains.

+1 for Wyeast 1272. You won't go wrong this strain, perfect for home brewing American IPAs. I've used it twice for BrewDog recipes and I think it improved the beer, compared to the English strain I normally use for IPAs (WLP007), in terms of amplifying the hops.

Thanks for every ones input, I was leaning towards 1272 due to the not needing filtering!
I compared it to whitelabs equivalent but 1272 was still better.

WLP090 Super Dan Diego is popular with the Brulosophy crew. Might be worth a look.

I've used that in a couple of beers after reading a couple of their articles, and didn't like it, I found it left the beer with little or no body.

Yep. Reputed to be the Anchor Liberty strain.

Edit: Also BRY-97.

Hey ho....we'll see how it turns out! Did you use it for 6% beers or sub 5%? Just wondering it it might be better on the stronger IPAs....might dry them out a bit?...

I think I used it for beers in the 5-6% range. As you say, it's probably better for a stronger IPA style, especially if you're looking for a yeast that ferments clean. And it's good to try different yeasts, and find what suits your tastes. Currently my favourite yeasts are WY1318, and WLP565.

Pitched a 1L starter of WLP090 into a 23L batch of 1062 Blind Pig clone wort.

Started at 18.5 deg (bubbles every 4 secs after an 8 hour lag) and after 3 days pushed it gradually to 21.5 deg at day 5 (bubbles every 10-15 secs). It's now day 9 and it is still bubbling (about once/twice a minute).

Never had a fermentation like it! I'm normally crashing WLP002 by now. I thought 090 was supposed to be a quick fermenter?!??

I was hoping to to get it kegged and served for NY but this is bonkers!!!

Edit: just checked, it's at 1016. Wondering what might have gone amiss...and if it will get down much lower....should I rouse or raise the temp higher than 21.5?!!?

I'm guessing you might have under pitched, donchiquon. 23L @ 1.062 probably requires a bigger starter, I'd say. Did you oxygenate the wort? Without knowing how healthy the yeast were, assuming you used a 'fresh' WL pack, a bigger starter is the way to go. When things slow down like this, it's usually down to the condition of the yeast. Your beer should turn out fine eventually, you are very close to the reported minimum attenuation for WLP090. You could rack it off the yeast and let it take its course.

Thanks McMullan - I was wondering what might have caused it. I've had a couple of stalled fermentations in the early days but never one that just kept on chugging and took 10+ days to finish!

I used a drill and paddle to aerate for about 5 mins. The yeast was a new delivery but dated August 2016.

I ended up gently rousing the yeast and it carried on bubbling away. It is still going today (day 11). I haven't taken the gravity again.

It will be interesting to see if it gets down to 1012(ish) and also if I take some slurry whether the next beer I brew with it behaves differently.

Either way the Blind Pig smells great, especially as I gave the dry hop bag a big old squeeze when I roused the yeast - in for a penny....!
