Right then this is the plan....
I have got a myself a nice demijohn and air lock.
So I am going to warm through 4 litres of Apple juice.
Add half a jar of honey and stir until disolved.
Then one teaspoon of champagne yeast.
Am I going down the right road?
Poor into demijohn and sit back for a week....
Then tomorrow will start the John Bull Best....

Right then this is what has been done as above, added half a jar of honey and 4 tablespoons of sugar. Disolved it all.
Due to the size of the pan I did it in 2 halfs. After the first I added 1 teaspoon of Champagne yeast (i read somewhere that this was the way forward?!).
Now bubbling away......
My wife has declined first try, My daughter thinks I am mad.

We shall see....

Today I manged to buy a Hydrometer.
Just done a reading it came in at 1050....
The information that come with the Hydrometer suggests that this would be for a Dry wine?
Can anybody shed any light. What am I creating here?!!
Really pleased to see it bubbling away when I went into the kitchen this morning.
Had a sneeky taste after using the Hydrometer, a nice fiz and quite tasty at this stage....could be dangerous!

Is their any way that I can stop it fermenting to much and end up with a medium dry cider?
Or you can let it ferment out to dryness and then add unfermentable sweetener.
Good god we have merrydown and woodpecker cider drinkers in the forum Banish them!!
Medium sweet cider is surely only for those still at school or that sleep on parks benches. Personally ill be aiming for a full fermentation and hoping that it gets somewhere near a westons vintage dry, that is a drink to be wary of!!

Certainly not a Merrydown drinker.....I live less than three miles from the good old Thatchers farm. I just normally buy it in 5 liters half medium half dry. Otherwise as per my name I become:
Very much a ‘Wobbler!!’ after 2 pints,
Incoherent after 2.5
I have a distinct inability to walk after 3.
Which is good until I asses the stairs.. the bed is more comfortable than the sofa!!!
Sadly no longer a teenager either! The spots went but then sadly so did the hair!!!!!
Just out of interest a medium-dry cider when should I kill off the fermenting? i.e strong but not to NASA standard?!!!

Hi, I tried one of the first bottles last night and after 2 months in the bottle its still not ready. From what I can gather you really need 6 months for these to develop properlyFadanoid wrote:jaytee1

However what I was tasting was great and given time it will be even better, thats half the problem though isnt it we never given them time to mature properly. Im going to have to hide them.

To be honest SWMBO would probably like a sweeter version of the turbo cider that im planning so I would be interested in finding out when to stop fermentation. I would imagine that if you tested it daily by drawing off with a turkey baster, you could probably match the taste that you were looking for before adding the campden.
