Not really relevant, but, honey, while it does not spoil, does harbor botulism spores. It is for this reason that it is not recommended to be used as a sweetener for babies.
Botulism isn't a problem in beer as the pH is too low to allow any growth, so no problems with adding unpasteurised honey to beer post boil.

Local honey here. My honey guy passed away recently but his widow didn't think he pasteurized it.
When it came time to add the honey I got impatient (short of time) and never got around to pasteurizing it anyway just heated it up a bit to make it pour more easily - diluted and added. In my rush I didn't think it through and treated it like wort prior to pitching. Shook the hell out of it before I added it to the fermenter. It dawned on me during clean up that I probably didn't want to add aerated dilute honey to the fermented beer - doh!
It is conditioning now and I am a couple points lower on my anticipated FG. It could have been all that air or possibly an infection . . . time will tell.
I wonder how this one will come out.
