Carbonation and its lack of in my AG (Bottles)

Post by WishboneBrewery » Wed Aug 05, 2009 6:55 pm

Just cracked open 2 testers...
This kind of follows on from my other post which was worries over carbonation in the bottle (viewtopic.php?f=2&t=25461)
My first AG (viewtopic.php?f=24&t=24588) has very little fizz, its 1 week away from maturity, giving it a bit of a lack-lustre taste. (12L batch)
My second AG (viewtopic.php?f=24&t=24918) is better, though obviously younger and needs more time to mature, but still lacking in carbonation. (12L batch)

Both were bottled via bottling bucket and primed with 50g or either Household Sugar or DSM (definitely sugar in AG2) and kept in the warm for 2 weeks after bottling give or take an odd day or two. Both AG brews pour crystal clear with little sediment disturbance

This has been my priming procedure for my Extract Brews and all but the very first has fully carbonated to the point where I think its right, I think my first Extract batch must have been a limp wristed-2-handle-capper session.
Since the 2 handed capper I've bought a proper Bench capper which I hope is doing a better job along with being a lot easier and versatile.

My third AG (viewtopic.php?f=24&t=25412) is in the FV at the moment, due to be bottled around the middle of next week, what am I doing wrong since the start of AG that I was doing right for 6+ extract brews and a similar amount of kit brews????

My last extract brew (viewtopic.php?f=24&t=24735) is already well carbonated and very drinkable. ;)

Oh, and I have read the FAQ section, and my last Extract also rules out my Protafloc question from another thread as I copper finned that as well as the AG's.

Do I have to Prime more or Pitch a bottling yeast? I'm confused, my steps into AG have left me less than effervescent!

Thanks.

That's not much sugar to be using for 12L. I am not sure how many volumes of CO2 you were looking for though.
After only two weeks don't expect it to be too fizzy. Check out this link, I think that it might be helpful to you.

Sorry, "CO2 volumes" means absolutely nothing to me.
I'd like Fizz but not as much as lager, Bitter and Stout can have a little less still, though I'd prefer an IPA to have a good sparkle :)

From right at the kit brewing stage I have been priming with 80g to 100g in a 23Litre batch, I'd have thought that 50g in 12litres would be ample, and has indeed proved to be before I dipped my toe in AG :)

I too, prime between 80g to 100g for a typical ale of 23L, about 120g for more fiz and even 150g for lager types. I always dissolve white sugar in boiling water (then cool). I have also noticed that in my AG brews there is less carbonation. I have also noticed that the first week after bottling the temperature makes a big difference to the carbonation. Just moving to a warmer place may do it for you. I always try to remember just how "flat" a real ale is at the pump in a pub! :?

I use just 50g for 36 bottles, but generally fill them almost to the top, leaving hardly any room for compression so all the CO2 gets forced into the beer. Normally works out ok!

I might go for 60-70g over my 12Litre AG batches, see how that does...

I generally prime each 500ml bottle with about a level teaspoon full of Tate & Lyle. My beer if anything is too carbonated for my liking, so I will be reducing it next time. When I keg it I go for 80g in about 23/24 litres, so I would have thought that 50g in 12 litres was spot on?

I might even pitch some yeast when I bottle... Just to be safe!

I'm hoping to be doing an AG tomorrow......................but I will be drinking some pub stuff tonight :? Hope this leaves enough daylight by the time I wake up

When I bottle this one I will probably use 100g of white sugar to a 23L brew. If I get a barrel and do a "secondary" fermentation I will probably go for 80g. See my thread on To rack or not to rack.
