Coopers Pils advice

After the resounding success of my first two brews, Coopers cerveza and canadian Blonde I tried out a Pils.

I bought a temp controller, fish tank heater and water bath. In my garage I have manged to keep the temps at 13-14 degrees for 2 weeks (curse this warmer weather) ;)

I plan on keeping it in the FV undisturbed for another week. Then I will take some readings.

My question is this...

What do you do before bottling, do I take it out the water bath for a couple of days to come up to room temp, or take the readings in the bath and then bottle at 14 degrees and let it come up to room temp?
If it still smells eggy do you leave it longer?

I can't believe how well my cerveza turned out. After 30 days of conditioning I was in two minds about binning it. I tried some more on day 52 and it was freaking awesome, everyone that's tried it has loved it. I need this pils out the FV to get another couple of batches going :)

I`d be tempted to bottle at the fermenting temp and store it at the same temp, or, maybe a couple of degrees higher, for a couple of weeks while the lager yeast gets to work on the priming sugar.

I`m doing one at the moment and it`s having it`s D/A rest then I`ll drop it back down to 14 for a week then crash cool and keg.

you'd be surprised how long it might take at those temps. mine took 3 weeks to get down to .010 and ready to bottle.
do do a diacetyl rest like oldtom suggested, it's pretty simple, takes only a couple of days and will make your beer taste better quicker.

my pils was quite tangy and had a weird aftertaste for the first 1-2 months, but after that it was lovely. so patience again will serve you well with this brew.

just bring the temperature of your brew up by a few degrees and leave it at that temperature for a couple of days. then proceed to bottle.

Thanks, that's presumably once you have taken readings and determined it's finished. Mine sits at about 13 degrees right now. When it's done let it come up to 15ish for two days then bottle.

I might have to buy a second coopers kit, one FV just isn't cutting it :D

get 3 or 4 mate, you'll always find a use for them.
