I made up my second attempt at a Coopers Stout on Wednesday night.

I brewed one last year, but wasn't overly impressed. I think this was mainly because I bottled it, didn't have any fermentation temperature control and used medium DME instead of a darker variety :|

This time no messing, I will be kegging the lot.

What I brewed on Wednesday is pretty much a 'Ditch'............

1 x 1.7kg can of Coopers Original Series Stout
1kg (2 x 500g bags of Muntons) Extra Dark DME
250g of Demerara Unrefined Cane Sugar
1 x 7g Coopers kit yeast
Brewlength - 20L
OG - 1.044 @28C (1.046 corrected)
Fridge Ambient Temp. - 20-21C

I couldn't pitch the yeast on Wednesday night, because I had managed to end up with 20L of wort at 28C #-o

The yeast went in on Thursday morning at 20C after some frantic aeration :D

This is where it's at tonight..........hopefully contained :shock:

Sounds a whole lot closer to my ideal than a lot of the stuff I've seen named after it, mate. I'll be most interested to hear what ye make of it, out of the keg Image

I just made one with 2 jars Holland and Barrett malt extract and 500gms extra dark unrefined brown sugar.
WOW!!!! You can scrape the lacing off the empty pint glass with a spoon.

I ferment mine slightly higher at 22c as per the masterclass. It`s wonderful stuff. Got one to keg today and set another off yesterday. Trying to keep supply up with demand. Not managed it yet, but getting close. :D

I had an empty keg getting in the way in my shed, and fancied some dark beer :idea:

Also 3 weeks today, I've got some mates coming around for an all day session in the garden, so some instantly drinklable stout will be just the job :)

Sounds good, I have one Cooper's Irish and plan to brew to the same recipe, problem is this warm weather, 26C in the kitchen just now and I haven't got a brew fridge.

I plan on kegging it next Saturday (day 10), so will start sampling as soon as its carbed up and report back :beer:

:shock: No. Don't! Sort a fridge out, fast. Try to brew at That temp and ye'd might as well cut out all the labour and just throw the kit away. It'll be beyond vile :(


That said? I'm a smug b@stard. Because my brand new, digital Mini / Max Thermometer is now telling me this room's bamg on at a cosy 21 c And I'll be putting six in, tomorrow. No need for the heaters even. How smug am I? 8)

Ditch, I'm pretty sure that Coopers suggest a max brew temp of 28C, so do you really think 26C will be too warm ?

Forecast for this afternoon is, er..... 31C

I think they are talking about the max pitching temp. I usually pitch at 27 then let it cool to 22 when the heater picks i.

I posted on here, couple of months ago now(?) how I had trouble with a couple of my FV's turning out nasty. Finally ran the problem down to the heaters having drifted. Control knobs had been tapped and I was making that gear at something like 24c. It was horrible.

Having sussed that out. I readjusted the temp's and the beer's been great again, ever since. At 26c? It stands to come out tasting like something made in an unsanitised tin bath, in the garden.

I checked the gravity of this brew on Tuesday (day 6), and it looked almost done at 1.012 (4.6%).

The 100ml from the trial jar didn't go to waste and tasted very good :)

As planned this brew has been kegged tonight on day 10 :)

I re-checked the gravity yesterday, and it was still firmly @1.012.

I'm thinking 1 week to condition, then dive in :out

Don't make yeself suffer or go without, mate! I put my load in, last Monday. Dropped a f**king bucket, tonight! :evil: Mopped that up and got straight back in the saddle.

So, I'm now amongst FV #2. Knocked up last Monday. I'll be putting in for the next six kits any time now. Have to remain aware that, with 20 Ltrs down the f**king drain, I'll be running short again, sooner :(

But, yeah; Make it. Drink it. It's fine.

Only way I've yet made it noticeably better was to cut it down to three gallons. Then it was liquid sex and social suicide! Image
